Nostalgic Rainbow Ice makes a comeback

A shaved-ice company founded by Salt Lake City natives Michele and Scott Van Leeuwen in the 1980s is making a comeback under new ownership: Sioux City, Iowa, native Eric Rasmussen and his wife Ali Rasmussen, who called the Rainbow Ice brand “iconically nostalgic” and “holds a special place in so many childhoods.” The twist is that the once-stationary stands are now mobile.
